How to apply dry rubs:

1.  Use a paper towel to pat down the meat to remove as much moisture as possible from the surface.

2.  Sprinkle the dry rub onto the meat.  The more dry rub, the spicier the meat will be.

3.  Massage the rub evenly onto the meat with your fingers.

  1. Cover the meat with plastic wrap and let it rest for 15 -20 minutes before cooking.
